Well my first experiment with sweet pakora - essentially just fruity doughnuts.

 

I tried it first without any sugar but it tasted pretty disgusting so ended up adding some and it was much nicer.  In fact Rosa declared it was "really yummy!"  The pear didn't work that well it was too juicy and soggy, the banana and raisins were the tastiest bit. I also think it might have been better with plain white flour instead of gram flour, and milk instead of water, but perhaps that means it will no longer even vaguely qualify as pakora!

 

1 apple finely chopped

1 pear (not too ripe) chopped

1-2 bananas chopped

Large handful of raisins

Grated zest of 1/2 orange

1 cup flour (I did a mixture of gram and white flour)

1 tsp baking powder

1 tsp cinnamon

1 tsp ground ginger

grating of nutmeg

pinch of ground cloves

3 tablespoons of sugar

2 tablespoons honey/maple syrup

water to make up a wet dough (or milk?)

sunflower oil for frying

 

Makes about 15 pakora
